Ingredients
2 cups sugar
2/3 cup butter
4 eggs
3 cups bananas
2/3 cup water
3 1/2 cup flour
2 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 cup raisins or nuts

Directions In a large bowl, blend together sugar and butter. Add the bananas, eggs, and water, mixing together thoroughly. Add flour, baking soda, salt, and baking powder and stir just until moistened. Blend in the raisins or nuts. Grease the bottoms of two loaf pans and pour the batter into them. Bake at 350 ̊F until toothpick comes out clean, about 60 to 75 minutes. Cool for 5 minutes and remove from pans.

  • Options: substitute whole wheat flour for half the flour and/or add 1/2 cup bran or wheat germ.
