Ingredients
500 g flour (2 cups + 1 Tbsp)
30 g baking powder (2 Tbsp)
pinch of salt
100 g granulated sugar (7 Tbsp)
125 g butter (1/2 cup)
240 cc cold milk (1 cup)
extra milk or egg to brush on the scones before baking

Directions
Preheat oven to 200 ̊C (400 ̊F). Sift flour, baking powder and salt into a bowl. Mix butter into it rapidly, cutting with a knife, then blend it, using your fingertips. Stir in the sugar. Mix in the milk little by little, using a knife. Flour your hands and knead the mixture until it's a soft dough. (If it feels dry, add a little more milk). Turn the dough out onto a floured board and roll it out to a thickness of 2.5 cm. (1"), using a rolling pin. Cut out scones with 4 or 5 cm. pastry cutter. Place them on the oven sheet and brush them with milk or egg. Bake for 12-15 minutes till golden brown. Eat these with jam and clotted cream.
